Ingredients

makes 15 – 18 balls = 2 – 3 balls per serve

  • 1 cup cashews, soaked
  • 120g (4 scoops) vanilla protein powder
  • 2 T berry powder
  • 1 tsp vanilla extract
  • 1 T rice malt syrup
  • 1/4 cup desiccated coconut, plus extra for rolling

Method

Place all ingredients into a food processor and blend until a dough forms (you may need to stop and scrape the sides as needed), you may need to add a little water if the mix does not stick together.

Roll dough into evenly sized balls. Roll balls in desiccated coconut (for variety you can choose to leave some uncoated).

Store in an airtight container in the fridge.
