BBQ Marinated Steak

Certainly a favourite in summer is this delicious marinated rump steak, cooked to perfection on the BBQ served on a bed of crispy salad!

Ingredients

(serves 4)

600g rump steak (or preference) marinated

For the marinade:

1 T of  each:

  • coconut amino sauce or tamari sauce
  • sweet paprika
  • cumin
  • Mix ingredients together and coat steaks and rest for 15 mins.

For Dressing:

  • 2 large cloves garlic, sliced crosswise very thin
  • 1 T rice malt syrup
  • 5 T Thai fish sauce
  • 1 large lime juice of
  • Mix garlic, fish sauce, lime juice, and syrup together in a bowl

Preparation

If using BBQ, turn it on to heat up.

Method

Fry or BBQ the steak to your liking (ours is medium-rare) and sear for 3 minutes without moving the steak (to form a crust). Turn and cook for 2 minutes for rare or 3 to 4 for medium rare. Remove the steaks from the pan and let them rest on a board or platter for a few minutes before serving. Cool and slice thin, into even strips

Vegan option:

Replace rump steak with eggplant & capsicum and omit Thai fish sauce in the dressing. You can also add some chickpeas to the salad and sprinkle with hemp seeds.

Method:

Roast or BBQ eggplant & capsicum to your liking.  Once cooked, cool and slice thin, into even strips.

Make a bed of the salad mix on a serving plate. Layer the eggplant and capsicum on top and drizzle with dressing.
