Nutritious Green Salad

This Nutritious Green Salad is one of my absolute favourites and one I prepare at least once a week at my house. I serve it as side dish at BBQ’s or as a main dish with some added protein. 

It’s hard to resist this salad’s simplicity. And the best part is, you can add or subtract just about anything you like and make this simple salad anything you want. 

Ingredients

  • 1/4 green capsicum finely sliced
  • 1 celery stick finely sliced
  • 1/4 green cabbage finely sliced
  • 2 handfuls mixed salad greens
  • I large shallot finely sliced
  • 1 T black sesame seeds or white
  • 2 T pepitas

Method

In a large bowl mix the greens together, then sprinkle the sesame seeds & pepitas on top. Just before serving squeeze 1/2 lemon juice, and salt and pepper to taste and toss to combine.

Serving Suggestions

Great served with Chilli Spiced Chicken Bites!

 

Final Thoughts

Try and add some extra ingredients to this salad like, asparagus, broccoli, avocado, red onion, almonds, walnuts. You get the picture. I can’t wait to hear what makes it into YOUR Nutritious Green Salad!
