Orange and Black Pepper Poached Chicken

Ingredients

(serves 4)

  • 4 medium chicken breasts
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced or pressed
  • 1 orange, zest and juice
  • 1 teaspoon sea salt
  • 2 teaspoons black pepper
  • 1 cup chicken broth

Preparation

Preheat your oven to 350°F (175°C). Coat a rectangular baking dish with a bit of olive oil to prevent sticking.

Method

In a small mixing bowl, whisk together the olive oil, minced garlic, orange zest, orange juice, sea salt, and black pepper.

Pour the chicken broth into the bottom of the prepared baking dish. Place the chicken breasts on top of the broth.

Pour the orange mixture evenly over the chicken breasts.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through. About halfway through the cooking time, remove the chicken from the oven and baste it with the pan juices using a pastry brush.

When the chicken is fully cooked, baste one last time, then remove from the oven and let it rest for 5-10 minutes before serving.
